South Australian Lobster's sweet profile coupled with its delicate mouthfeel puts it at the pinnacle amongst lobster sashimi. While many restaurants use cheaper Australian lobsters found in tropical waters, we selectively source our lobsters from Tasmania where these creatures can survive in high salinity water at under 10 degrees Celsius. This makes the lobsters more hygienic and safe for consumption in its most raw form, sashimi.
