Canadian Geoduck Sashimi

Taking the crown amongst its fellow mussels, the Canadian geoduck is the most popular, with its taste being simply described as "fresh and sweet". Hong Kong began importing Canadian geoduck in the 1970s and it became a must-have ingredient for sashimi and hot pot from the early 1990s.
